The Allure of Foie Gras
For ages, foie gras has been in the apex of the most legendary of gatherings and celebrations, as well as on the tables of farmers who dedicate their lives to this art. Today, chefs, connoisseurs and food enthusiasts alike, continue to celebrate its culinary enchantment.
Junny Gonzalez, the lively “Foie Gras Lady” understands very well what the “allure” of foie gras is all about. It all started on a small farm in Ladornac, France, where she prepared terrines and pâtés side by side the great artisans of the region. These delicacies would be shared at the table with those who returned from working the fields, as well as the guests spending an evening at the charming ferme auberge (farm/bed & breakfast) which was our home. Since then, she has shared her recipe for the delicious Terrine of Foie Gras with thousands of food lovers who attend local wine and food tasting events. On any given weekend, she enthusiastically spreads the velvety Terrine over crisp slices of sweet baguette, and slices the maple Smoked Magret which is savored with a dash of honey mustard. Even when oysters, caviar and other great culinary pleasures are present, one can expect a long line of visitors waiting to taste our duck products! Watching new enthusiasts, as well as the friends who have been coming to the foie gras table for years, delight in our fine products brings her back to the magical time when she was introduced to foie gras.
In addition to Sonoma Valley and Northern California events, Junny and our team travel all over the United States meeting chefs and other food professionals. She understands the importance of giving these valuable individuals her personal attention. One of the most rewarding aspects of being the “Foie Gras Lady” is the chance to get to know some of the finest chefs and visit the best restaurants in the country, where she can often be seen having lively conversations with the wait and cooking staff as well. A trip to the kitchen is a treat as it gives her the opportunity to see each chef’s personal style and preparations.
