In 2003, we introduced to the market our premium brand: Artisan. This is Moulard foie gras and meat “à l’ancienne,” meaning we utilize the “old style” methods of production. Sonoma – Artisan Foie Gras encases the roots and traditions of our Sonoma origins along with our artisanal methods of production.
Sonoma - Artisan Foie Gras is the only foie gras producer in the West Coast, and it is unique in the continental United States and Canada as it utilizes the old-style methods of farming, care and nutrition. Our inspiration was to return to a product that represents foie gras the way it is made by French artisans, with limited production, using the traditional, all-natural diet of whole cooked corn.
